Vigneti della Serenissima o Serenissima

The following types of sparkling wine belong to the protected designation of origin (PDO) "Vigneti della Serenissima" or "Serenissima": basic white, rosé, vintage and reserve.


Grapes

The sparkling wines "Vigneti della Serenissima" are composed of Chardonnay, Pinot Blanc and Pinot Noir, absolute or combined.


Physicochemical and Organoleptic properties

The minimum total alcoholic strength by volume of all sparkling wines varies from 11.5% vol. to 12% vol. The whites have a characteristic straw yellow colour, with reflections ranging from golden yellow to greenish; the aroma is delicate, light, sometimes complex and typical of the long aging in bottle; the taste instead ranges from savoury, to fresh, fine and harmonious. The rosé version, on the other hand, has a more or less pale pink colour; the aroma is fruity with a hint of yeast; the flavour is characteristic and savoury. All are accompanied by a fine, persistent and elegant foam.


Grape production area

The production area of "Vigneti della Serenissima" is situated in an arc between the Alps to the north and the Pianura Padana to the south. The vineyards are located on a slope facing south, so the climate is mild, with windy and cool summers.


Specificity and historical notes

The name of the Protected Designation of Origin (PDO) "Vigneti della Serenissima" tells its story, linked to the "Serenissima Repubblica di Venezia", present as an independent state from the eighth century to 1797, with the capital city of Venezia. During this period, viticulture has found its great development in the area, leading to the creation of sparkling wines of high historical and gastronomic value.
