Vin Santo del Chianti Classico

The protected designation of origin "Vin Santo del Chianti classico" includes two types of wines: Basic and Occhio di Pernice.


Grapes

Trebbiano Toscano composes the basic version for at least 60% and “Malvasia”, absolutely or jointly, white and red grapes can be used only if suitable for cultivation for the Toscana region, up to a maximum of 40%. The Occhio di Pernice version, on the other hand, must be composed of at least 80% of “Sangiovese” grapes, which can then be used to produce white and red grapes, suitable for cultivation in the Toscana region, up to a maximum of 20%.


Physicochemical and Organoleptic properties

The "Vin Santo del Chianti classico", both base and Occhio di Pernice, have a minimum total alcholic strength by volume of 16% vol. The basic version has a straw yellow color that can vary from golden to amber, the scent is ethereal and intense, the flavor instead goes from dry to sweet, with a more pronounced roundness for the type medium sweet. The Occhio di Pernice version, on the other hand, has a colour ranging from deep pink to pale pink. The aroma is ethereal and intense, the taste is sweet, soft and velvety.


Grape production area

The production area of "Vin Santo del Chianti classico" is a plateau excavated with slopes not prolonged but sometimes steep. The soil is generally shallow, recent and brown, suitable for cultivation.


Specificity and historical notes

The cultivation of wine, in the area of "Vin Santo del Chianti Classico", takes root especially during the Middle Ages. The production of Vin Santo begins in 1439 and continues to the present day, giving us a product of undoubted value.
