Spoleto
The Protected Designation of Origin "Spoleto" includes the wines Bianco, Trebbiano spoletino, Trebbiano spoletino passito, Trebbiano spoletino superiore and Trebbiano spoletino spumante.
Grapes
In the production of Spoleto bianco wine, at least 50% of the grapes used come from vineyards made up of the Trebbiano Spoletino variety, together with other white grapes suitable for cultivation in Umbria. Trebbiano Spoletino is also the basis for the vinification of all other types of the denomination, but with a higher percentage, equal to 85% (minimum). Also in this case, with the remaining 15% (maximum), the use of other vines, identified as above, is allowed.
Physicochemical and Organoleptic properties
The "Spoleto" Bianco (minimum total alcoholic strength by volume of 11% vol.) is a wine with a dry, sometimes acidic flavour; its appearance is straw yellow and it is accompanied by a characteristic and vinous aroma. The types with indications of the Trebbiano Spoletino grape, on the other hand, have rather similar organoleptic characteristics, differing exclusively in the alcohol content, which is equal to a minimum total alcohol content by volume of 11.5% in the basic version, a minimum total alcohol content by volume of 11% in spumante, a minimum total alcohol content by volume of 12.5% in Superiore and 17% in Passito. The color is straw yellow, embellished with greenish reflections, the smell is vinous and characteristic, the flavor is fresh, dry and sometimes acidulous. The sparkling wine also has a fine and persistent froth.
Grape production area
The production area covers a flat area crossed by the river Clitunno and whose climate is influenced by the presence of the Umbrian-Marche Apennines.
Specificity and historical notes
Already in ancient times, the wine of Spoleto has been able to boast of two important literary quotations. The first is from Martial (1st century A.D.), which compares it to Falerno, the second is from the Greek Athenaeum, which defines it as "soft, of a colour similar to gold".
