Oltrepò Pavese Metodo Classico

The Protected Designation of Origin "Oltrepò Pavese metodo classico" (DOCG) identifies a particular type of sparkling wine, produced with the Classic Method. It also includes its variants: Rosé, Pinot Noir and Pinot Noir Rosé.


Grapes

The "Oltrepò Pavese Metodo Classico" and its Rosé variant are produced with 70% Pinot Noir grapes, combined with Chardonnay, Pinot Gris and Pinot Blanc grapes which, alone or in combination, can account for up to 30% of the total. The proportion of Pinot Noir, on the other hand, rises to 85% in the Pinot Noir and Pinot Noir Rosé variants. Also in this case, the same grape varieties listed above can be used to produce the wine, but within the limit of 15%.


Physicochemical and Organoleptic properties

The basic version of the Oltrepò Pavese Metodo Classico (11.50% vol.) has a straw-yellow color, variable intensity, and a fine and persistent froth; the scent is gentle and broad, opens in a fine bouquet that combines a flavor savory, fresh, harmonious. The Pinot Noir version (12.00% vol.) is enriched with orange reflections in the coloring and a greater structure on the palate. The two rosé variants, on the other hand, have in common a pinkish hue and a fine and persistent froth. Both have a gentle scent, more ample in the Pinot Noir Rosé variant, which also emerges for a taste of good structure, savory and fresh. The Rosé, on the other hand, is harmonious and moderately full-bodied on the palate. The alcohol content is 11.50% vol. for Rosé and 12.00% vol. for Pinot Noir Rosé.


Grape production area

The production area of Oltrepò Pavese is located within the Pianura Padana, between the Alpine and Apennine mountains. From a geological point of view, it has pre-Apennine characteristics, with soils of very heterogeneous composition.


Specificity and historical notes

The first trace of viticulture in the Oltrepò Pavese area is represented by a vine shoot, found near Casteggio and dated back to prehistoric times. From there starts a history and a tradition that has become a backbone of the local economy.
