Colli della Toscana Centrale

The PGI "Colli della Toscana centrale" includes different types of wine: white, also sparkling; red, also Novello; rosé. In addition, types can be produced with the indication of one or two varieties.


Grapes

"Colli della Toscana centrale" PGI wines of the red and rosé types must be obtained from one or more of the Sangiovese, Ciliegiolo, Cabernet Sauvignon, Cabernet Franc, Merlot, Pinot Noir, Canaiolo Nero, Syrah and Gamay vines; for the white and sparkling white type, there must be one or more of the varieties Trebbiano Toscano, Vernaccia di San Gimignano, Chardonnay, Pinot Bianco, Pinot Grigio, Malvasia del Chianti, Vermentino, Sauvignon and Riesling Renano; for the red Novello version there must be one or more of the varieties Sangiovese, Merlot, Canaiolo Nero and Gamay. In all cases, other varieties suitable for cultivation in the Region of Toscana may be used up to a maximum of 15%.


Physicochemical and Organoleptic properties

The red (10.50% vol.) and the red Novello (11.00% vol.) have a violet or ruby colour, tending to garnet with maturity, a smell of primary and secondary aromas and a young, easy taste. The rosé version (10.50% vol.) has a light pink colour, with a scent of primary aromas and a balanced taste. The white (9.50% vol.) is pale yellow or straw yellow in colour, characterised by a simple, floral aroma and a slightly acidic flavour; the sparkling type (10.00% vol.) is straw yellow in colour and differs for its delicate, floral aroma, with notes of fruit, and a lively but soft, balanced flavour.


Grape production area

The central core of Toscana is surrounded by the hills of the Aretino, the Senese, the Pistoiese and the Pratese. The altitude of the cultivated land is between 200 and 400 meters in height on average.


Specificity and historical notes

The techniques used for vinification in the area are more suitable for structured wines. A specific method of this area is the maturation in wooden pots, which determines peculiar organoleptic qualities.
