Colli della Sabina

The Protected Designation of Origin “Colli della Sabina” includes both a white wine and a red wine.


Grapes

Colli della Sabina Bianco must be produced using grapes from vineyards that are at least 50% Malvasia del Lazio and between 5% and 35% Trebbiano Toscano and/or Trebbiano Giallo (to be used individually or in combination). In addition, for a percentage not exceeding 10%, other white grapes suitable for cultivation in Lazio may also be used as complementary varieties. Colli della Sabina Rosso, on the other hand, is made with between 40% and 70% Sangiovese and between 15% and 40% Montepulciano. Also in this case, complementary black grapes may be used, provided that they can be cultivated in the region in accordance with the law.


Physicochemical and Organoleptic properties

The white wine belonging to this denomination is straw yellow, with a tone that can be more or less intense, depending on the production. It releases a characteristic, delicate and fruity perfume, which is combined with an equally delicate and harmonious flavour, which can range from dry to sweet. The minimum alcoholic strength shall be 11% vol. The red wine, on the other hand, has a lively ruby red aspect, with a vinous and intense aroma and a dry to sweet flavour. The alcohol content is 12% vol.


Grape production area

The production area is located in central-eastern Lazio, between the provinces of Rome and Rieti. A hilly area, where the vineyards never exceed 600 meters above sea level and the climate is temperate.


Specificity and historical notes

The Colli della Sabina are wines that are the result of a long tradition that has led to their improvement. The wine-growing activity of the Sabina area was already known in Roman times and praised by classical authors such as Strabone, Pliny the Elder and Orazio.
