Bianco di Custoza o Custoza

The Protected Designation of Origin "Bianco di Custoza" or "Custoza" includes four different types of wines: base, Superiore, Passito and Spumante.


Grapes

Bianco di Custoza" wines are composed of 10% to 45% Trebbiano toscano, 20% to 40% Garganega, 5% to 30% Trebbianello, 0% to 30% Bianca Fernarda, 0% to 30% Malvasia, Riesling italico, Pinot bianco, Chardonnay and Manzoni Bianco present in absolute or combined.


Physicochemical and Organoleptic properties

The basic white wine (minimum total alcoholic strength by volume 11% vol.) has a straw yellow colour, the aroma is fruity, fragrant and slightly aromatic, the flavour is savoury, soft, full-bodied, slightly bitter; the Superiore version (12. 5% vol. ) has a straw yellow colour that tends towards golden yellow as it ages, the aroma is pleasant and slightly aromatic, the flavour is soft, harmonious, full-bodied with a slight perception of wood; the Spumante, on the other hand, (vol. 11.5%) has a fine and persistent froth, the color is more or less intense straw yellow with slight golden reflections, the scent is fragrant, slightly aromatic if spumantizzato with Martinotti method, fine and composed if spumantizzato with the classic method, the passito has golden yellow color, the smell is intense and fruity, the flavor is medium sweet and sweet and slightly aromatic.


Grape production area

The production area of the "Bianco di Custoza" is characterised by the presence of morainic deposits on Lake Garda. The land belongs both to the morainic amphitheatre and to the fluvioglacial plains connected to it. This results in a very variable pedology in the area of cultivation.


Specificity and historical notes

The tradition of viticulture in the "Bianco di Custoza" area is ancient and has evolved over time. The reduced climatic variability, together with a wide orographic and pedological diversity, contribute to make the "Bianco di Custoza" a product of undoubted value.
