Colli Asolani - Prosecco

"Colli Asolani - Prosecco" or "Asolo - Prosecco" (DOCG) is a Protected Designation of Origin reserved for the wine of the same name and its variants: Spumante (with an indication of Superior) and Frizzante.


Grapes

The production of these wines must involve the prevalent use of grapes from the Glera vine. Within the limit of 15%, however, other varieties can also compete: Verdiso, Bianchetta trevigiana, Perera, Glera lunga. For the Spumante version, the addition of grapes from Pinot Bianco, Pinot Nero, Pinot Grigio and Chardonnay vines is also allowed.


Physicochemical and Organoleptic properties

"Colli Asolani - Prosecco" or "Asolo Prosecco" wine has a straw yellow colour, more or less intense and a characteristic fruity smell. The taste varies from dry to sweet, round and characteristic. The minimum total alcoholic strength by volume shall be 10,50% vol. The Spumante variant of the same wine has a brilliant straw yellow hue and a persistent froth. The aroma is pleasant and fruity, as is the taste, which has a full-bodied character and varies from brut to bite. The minimum total alcoholic strength by volume is 11. 00% vol. Similar characteristics also for sparkling wine, which however has the formation of bubbles and a slightly different flavor, from dry to sweet. The minimum total alcoholic strength by volume shall be 10,50% vol.


Grape production area

The production area falls within the province of Treviso, and includes the hills of Montello and Colli Asolani, at the foot of the Dolomites.


Specificity and historical notes

The development of the winemaking tradition in the "Asolo - Prosecco" production area is initially due to the intervention of Benedictine monks, who settled in the monastery of S. Bona in Vidor and in the Certosa del Montello in Nervesa. Later, when the territory came under the control of the Republic of Venice, the production of wine experienced a further flowering.
